The cook supervises and directs food service operations, coordinates the preparation and serving of food for regular meals, special diets, and events, and coordinates the activities of the kitchen and dining room in the absence of the Certified Dietary Manager/Food Services Manager. Determines substitutions of menu items based on documentation of resident likes and dislikes and within the restriction of individual diet orders, policies and procedures. Provides work direction and guidance for the food service workers to assure that all foods are prepared by the scheduled time. Provides input to the Dietary Manager regarding the performance of kitchen employees and may call employees in to work as necessary. Shifts will vary and will include weekends. Prepares and serves a variety of foods according to safety and sanitation guidelines. Supervises food production employees to ensure continuity and quality service. Follows safety and infection control procedures to insure a safe and clean environment.
