Executive Chef (Finance)
High school graduate or equivalent.
Culinary Arts Degree and two (2) years' experience in hands-on food preparation/presentation or five (5) years' high-volume cooking and fine dining experience or equivalent experience.
Demonstrated experience in supervising staff and working in a team setting.
Certified in ServSafe Hazard Analysis Critical Control Point (HACCP) or provincial equivalent; ability to obtain certification within ninety (90) days of hire date.
Ability to perform basic mathematical functions necessary to order supplies and convert recipes.
Ability to read and prepare recipes, in careful detail, as provided by Sunshine Retirement Living.
Ability to work with staff and residents in resolving food service problems.
Experience in computer use and relevant software application's is preferred.
In addition to the above, the following skills are preferred: experience serving senior citizens; familiarity with laws and regulations applicable to the Community and Human Resources.
Maintains current food handlers permit as necessary to fulfill state or provincial regulations.
Demonstrated ability to communicate effectively in English, both verbally and in writing, with residents and staff.
Meets state or provincial health related requirements (as applicable for position).
Ability to work in a team setting and be a team player.
Maintain a positive, respectful, and professional approach with coworkers and residents
Ability to keep all business and operations information confidential.
Possess excellent customer service and organizational skills.

ESSENTIAL JOB DUTIES AND RESPONSIBILITIES
Responsible for ensuring the residents are provided with nutritious, safe, and appealing meals three (3) times daily, seven (7) days a week.
Control quality of food and prepare nutritious, appetizing, and attractive meals.
Assist food preparation and service on an ongoing basis, while continually monitoring and assessing employee performance and resident satisfaction. Prepare meals following Sunshine Retirement menus and recipes. Chefs may assist with preparation of meals on the line up to four days per week.
Responsible for scheduling and providing work schedules for all full and part-time kitchen staff, including meal and rest periods, and apportioning workflow to ensure kitchen timelines are met.
Prepare contingency plan for unexpected employee absences to ensure timely preparation, serving, clean-up, and presentation of all meals.
Participate in the Community Management Team meetings to communicate food services issues such as special community events, food-related activities, staffing, training modules, safety, etc.
Participate in the hiring and development of new employees, in consultation with the Management Team. This includes, but is not limited to, direct responsibility for hiring; training; supervision; scheduling of hours, breaks, meal periods; performance management, discipline, and discharge.
Supervise Food Service staff to ensure food preparation; serving, table setting, dishwashing and kitchen clean-up are satisfactorily and politely completed on a daily basis.
Evaluate employees' efficiency and productivity, and in the event of a deficiency, take responsibility for proper and effective follow-up and consultation with the Executive Director and Human Resources.
Operate the Community Food Service Department within the food and labor budget through careful planning, purchasing of food supplies, inventory control, maintenance of daily log and food costs computation forms.
Plan all food preparation following Sunshine's guidelines as detailed in the menus and recipes. Exercise judgment in monitoring weekly and extended menus and food production worksheets.
Employ skills and imagination in making mealtimes enjoyable for residents; address plate presentation and garnishing at each meal; use leftovers in a time-safe and creative manner.
Instruct employees in sanitary food handling procedures and safe work methods and ensure that these procedures are followed. Educate staff in ServSafe Hazard Analysis Critical Control Point (HACCP).
Responsible for monitoring and scheduling cleaning and maintenance routines for all food service areas and kitchen equipment to maintain high sanitation/safety standards.
Responsible for handling, in a manner that conforms to company policy and Community guidelines, all complaints made by kitchen employees and/or residents in a timely, positive manner.
Maintain timely and accurate documentation and submission of reports and invoices regarding the budget, inventory, and other food services as required by the Community Support Office Culinary Services Department.
Performs other duties as assigned by supervisor.
May be assigned to any other job functions in the community on a relief basis.
